Servings: 1.5 Time: 20 Minutes INGREDIENTS -2 egg whites & 1 whole egg, mixed -1 small jalapeño pepper, minced -½ cup of maitake and shiitake mushrooms, chopped -½ cup of spinach, torn -½ shallots, chopped -1 tbsp of coconut oil -Pinch of salt -Fresh ground pepper to taste -Crushed red pepper to taste DIRECTIONS -Preheat oven to 350 degrees -Heat heavy duty (oven safe!) sauté pan on medium-high heat -Melt coconut oil in pan -Add shallots and sauté for 1 minute -Add mushrooms and jalapeños and sauté for 1 minute -Add spinach and stir all for 30 seconds -Add eggs and let the edges set (about 1 minute) -Place in oven and bake for 15 minutes -Top with sliced avocado for an extra dose of omega 3 fatty acids.
